5 Ingredient Chicken Noodle Soup is super fast to make yet still makes a really delicious soup. When creating this chicken soup recipe we wanted to make sure it still held the traditional flavors of chicken noodle soup; tender chicken, plenty of noodles, flavorful broth, and a mirepoix of carrots, celery and onions. This chicken soup recipe hit all those markers in just 5 ingredients.

This is an easy recipe to make for a quick meal especially when you have leftover chicken or a rotisserie chicken!
Ingredient Notes
Tender Chicken: This is a great time to use a rotisserie chicken (Costco is a great place to get inexpensive rotisserie chicken), cut off the two breasts for this soup and then use the other parts for another dinner. You can also use the carcass for chicken stock!
You can also cook the chicken before making the soup. Simple place 2 chicken breast on a sheet pan and drizzle with oil and a little kosher salt. Roast in the oven at 350°F for about 25 minutes until the internal temp. is 165°F.
Noodles: The traditional noodle for chicken noodle soup is something called a “Kluski noodle”. You may not have noticed them before but you should be able to find them in your normal grocery store!
The Kluski Noodles will either be in the soup aisle, in the pasta aisle or by the other handmade, specialty or “Amish” noodles in the pasta aisle.
I also buy these Kluski noodles when they have them at Aldi. However at Aldi they are a German product called Swabian Egg Noodles

Broth/Stock: Use a flavorful stock if you can. Chicken Stock will be more flavorful than chicken broth. BUT we add a little chicken base to the stock to make sure it is AMPED with flavor (see below).
Chicken Base: Even though this soup only has 5 ingredients it was CRUTIAL to include chicken base! It is one of the secrets to really good chicken noodle soup.
You can find chicken base in the soup/broth aisle of the grocery store. It comes in a jar or tub and is in a paste form. We like the Better Than Bouillon Brand the best.
Mirepoix: This is a fancy word for a mixture of onions, celery and carrots. It is the base to this 5 ingredient chicken noodle soup recipe. Instead of calling for each ingredient separately you can buy it pre-chopped in the produce section at the store. It is actually pretty inexpensive at around $2.00 for a 10 oz. container.
You may also be able to find frozen mirepoix mix, that will work as well!

Ingredients
- 10 oz mirepiox mix; carrots, celery, onion fresh or frozen
- 2 teaspoon chicken base
- 1 lb. cooked chicken breast meat (about 2 chicken breasts, shredded or chopped = around 2 ½ cups)
- 48 oz chicken stock or broth
- 1 (heaping) cup kluski noodles
Instructions
- Add a tablespoon of oil to a pot over medium, medium-low heat. Once the oil is hot add the mirepoix mix (carrots, onion and celery). Sprinkle on a pinch of salt. Sauté for about 10 minutes, making sure the carrots are softened.10 oz mirepiox mix; carrots, celery, onion
- Stir in the chicken base and sauté for another minute.2 teaspoon chicken base
- Add in the cooked chicken and chicken stock, turn the heat up to medium, medium-high and bring to a simmer.1 lb. cooked chicken breast meat, 48 oz chicken stock or broth
- Stir in the noodles.1 (heaping) cup kluski noodles
- Simmer for about 15 minutes until the noodles are tender.
- Taste for additional seasoning and serve!
Storing and Reheating
- To store leftovers cool the soup completely and keep in an airtight container in the fridge for up to 4 days.
- The noodles may absorb some of the liquid when storing, so you may need to add some more chicken broth when reheating.
- It is not recommended to freeze this soup as the noodles will loose their texture when thawing.
